Cabutto
The Cabutto family is a well-known producer of Barolo wine. The history of this winery dates back to the second decade of the last century, when the founder Domenico Cabutto bought the farmstead of La Volta, from Marquis Gastone di Mirafiori, cadet nephew of Vittorio Emanuele II, King of Italy. The Cabutto estate is 32 acres of vines located in the best plots of the Langhe, a region dedicated to the production of the DOCG Barolo, destined to a single purpose: making wine from grapes from different hills and expositions, which brings a unique peculiarity to the final product, traditional Barolo.
Attention to quality, research, and the study of the organoleptic characteristics of the soil gave life to a wine that conveys the true varietal character of the grape in all of its purity and refinement.
The Cabutto family has taken care of the whole production process since the beginning – from hand picking and collecting the grapes, to the macerations, which take from 25 to 30 days, and finally to the wine’s aging in medium to large barrels made of Slavonian oak.

BAROLO DOCG, VIGNA LA VOLTA

PRODUCTION
Maceration of skins for 30 days, with temperatures peaking at 31 - 32 C / 88 - 90°F. “Barolo DOCG” requires a minimum of three years aging in oak. Hence, after malolactic fermentation occurs at 16 - 18 °C / 61- 64°F, the wine is aged for at least three years in Slavonian oak casks (30 - 33 hl / 780 - 858 gal.). The wine is further matured in bottles for fifteen to eighteen months before release. Average production is 1,166 cases.
DESCRIPTION
This is a ravishing, old-style Barolo with classically pure aromatics and structure. The nose explodes with scents of dried rose, truffle, sweet black-cherries, and the classic candied orange-peel and mint. The palate is rich and decadent, packed with beautifully textured and intense kirsch fruit and ripe plums. The wine is full bodied, with velvety, fruit-coated tannins. Delicious to drink in its vibrant youth Barolo DOCG, La Volta will continue to develop in complexity for a decade or more. An excellent accompaniment to red meat, barbecues and mature cheeses.

RISERVA DEL FONDATORE, BAROLO DOCG, LA VOLTA

PRODUCTION
Cabutto’s low vineyard production and careful selection of the grapes at harvest ensure that this is the family’s best Barolo DOCG. Vinification and aging: follow the ‘traditional’ idiosyncrasy of their riserva. The Barolo Riserva DOCG created is more robust and tannic, yet still soft and gentile. Long maceration on the skins, the wine ages for at least 4 years in Slavonian oak barrels (8 hl/ 208 gal), allowing the passing of time to refine its characteristics. Once the wine is put into bottles, it goes through an additional ageing period of at least 15-18 months. 2016 vintage: 166 cases made. (Other vintages made:1990 - 96 - 97 - 99 - 2001 - 11)
DESCRIPTION
Intense, elegantly transparent garnet red. The bouquet is full, complex, enveloping, with flowery aromas of dried roses and violets; fruity of raspberries and wild strawberries for the younger wines; of jam, marmalade and nutmeg, that with the passing of time are enriched with notes of black pepper, truffle, licorice, tobacco, leather, smoke and tar. Prominent softness, sapidity and tannins, this is a robust and austere wine, with notes of freshness still perceptible even after several years of ageing. This fabulous wine pairs well with red meat, lamb, and mature cheeses.
