Conti Sertoli Salis

The family of Conti Sertoli Salis comes from the region of Valtellina in Lombardy. In the alpine region to the north of Milan above Lake Como, Valtellina is a long and wide valley that runs from east to west, following the course of the Adda River. Between 1600 and 1700, the Salis family owned almost a third of the land of the Valtellina, and since 1665, they have been providing wines produced in their cellars to supply both Swiss and Valtellinese nobility.

Some years ago, Francesco Sertoli Salis decided to give new life to an ancient tradition and produce and sell the wines that were made in the cellars of the Palazzo of Tirano. The family restored a magnificent palazzo, the largest in all of Valtellina. They restored the historic cellar and used old enological techniques which had been forgotten, but which are thoroughly documented in a text dating back to 1834 entitled Introduction to Valtellinese Flora by Giuseppe Filippo Massara.

In this book, it is said that the maceration of bunches of whole grapes precedes the alcoholic fermentation. Thus, in the cellars of the Palazzo Salis in Tirano, they vinify the grapes to produce wines typical of Valtellina. These cellars are the site of the last stage of a demanding wine-making process.

Growing grapes is particularly challenging in this steep country, ringed with imposing mountains. Anybody who visits will be impressed by these majestic peaks, which rise to an elevation of 4,054 mt/ 13,300 feet and which guard the valley of Conti Sertoli Salis on three sides--the North, the East, and the South and shield the vines from the cold winds that come from the North and the East. Here you can admire the wonderful terraced vineyards, perhaps unique in the world, which climb up the north side of the Valtellina, and which therefore have an ideal southern exposure.

An unusual feature of this area is the layout of the rows: on each terraced plot, the vines are planted in the direction of maximum incline. This allows the plants to benefit from the best possible conditions, receiving the most light and warmth from the sun. Vines can grow at a height of 700 to 790 mt/ 2,300 to 2,600 ft above sea level, although the ideal height ranges between 350 - 450 mt/1,150 - 1,480 feet. The slopes here are so steep that sometimes the grapes must be transported down into the valley in baskets on people’s backs, or by aerial cableways. Given such conditions, the entire cultivation of these vines must be done by hand which is very expensive. In such rocky soil, the vines literally have to sink their roots into the rock itself, and yield per acre is extremely low. In the case of the vineyards of Baruffini, production is approximately 1,420 lt/ 375 gal per acre.

IL SALONCELLO

“Saloncello” is the small Saloon where important decisions are made

PRODUCTION - TERRAZZE RETICHE DI SONDRIO IGT

Key to the creation of Il Saloncello, intact and healthy berries are removed from the stem and placed in 70 hl/ 1,849 gal Slavonian oak casks where they are left to macerate for 12-15 days. There, the berries are in contact with a small quantity of crushed berries and must, previously introduced into the casks. Fermentation quickly follows and a partial carbonic fermentation takes place. When the casks are opened, 75 - 80% if the berries are still whole; these are gently crushed and returned to the casks. Alcoholic fermentation follows for 5 - 6 days at 28 °C/ 82°F. Before bottling, the wine ages for six months in oak casks and in Slavonian casks. The average production is 5,000 cases.

DESCRIPTION

Intense ruby red with some purple reflections and a lively, shiny color. The wine is elegant and variegated, strongly reminiscent of blackberry, blackcurrant, and raspberry, and finally clear peppered notes with a hint of spice bouquet. Initially, Il Saloncello is fully vinous and smooth in taste. However, it is a wine of great breeding and an excellent body that combines its immediate freshness with a complexity of characteristics that ensures noteworthy longevity. The tannic impression is well-balanced. The taste is very pleasant and the aftertaste has a good consistency. Il Saloncello pairs well with vegetable pasta, fish, salads, and soft cheeses.

CORTE DELLA MERIDIANA RISERVA

Translates as “Courtyard of the Sundial”, named after the main courtyard of the Palazzo Salis in Tirano.

PRODUCTION - VALTELLINA SUPERIORE DOCG RISERVA

Corte Della Meridiana is made exclusively with grapes grown in the classic regions of Grumello and Sassella in Valtellina. According to the old tradition of rinforzo (strengthening the wine), after harvesting, a specific percentage of grapes (15 - 25%) are left to dry in a special aerated room called “fruttaio” until late fall. Then they are added to the wine produced from the other grapes. In years of weaker wines, the winemaker increases the proportion of dried grapes added to the wine. The addition of these dried grapes triggers a second fermentation. At a carefully selected time in April or May, always late in the lunar cycle, the wine is poured into casks where it ages for 18 - 20 months. It then matures for an additional six months in the bottle. The average production is 2,000 cases.

DESCRIPTION

Good intensity of ruby red, with light notes of purple and a trace of orange color. The bouquet has scents of dried hazelnut mixed with licorice, vanilla, raspberry, and black currant with warm, round notes. This wine is very smooth, with a full, long-lasting sensation of red fruits, and sweet spices of warm, full-quality taste. There are hints of dried fruit and almonds. Try pairing it with salmon, poultry, venison, or grilled vegetables.

CANUA SFORZATO DOCG

GRAPES: 100% Nebbiolo (Chiavennasca)

PRODUCTION - SFORZATO VALTELLINA DOCG

Canua is Sforzato (strengthened) because it is made with hand-selected Nebbiolo grapes that are dried in specially aerated rooms called “fruttaio” from harvest time through midwinter. As a result, there is a large increase in sugar concentration, and some grapes are affected by botrytis, the “noble” mold that adds complexity to the wine. The must from the dried grapes is 25 - 28% sugar. A slow fermentation on the skins follows for 40 days to full dryness. The wine is aged in new and one-year-old Allier & Troncais barrels for 18-24 months. The average production is 2,000 cases.

DESCRIPTION

Canua is a deep ruby red, frequently with intense garnet reflections. The wine is remarkably ethereal given its high alcohol content. There is a marked scent of morello cherry, prune, and complex mixed spicy notes with undertones of cinnamon and licorice in the bouquet. Canua is very smooth, with a great body. There is elegance and complexity in the character of the taste. The fruit and spicy notes in the nose are confirmed in the mouth. This is an exceptionally pleasant wine with a long persistence in the mouth. Canua is an excellent accompaniment for rich dishes such as venison and red meat stews and also for polenta (corn grits) with cheese.
