La Togata
From a very small beginning, the winery now covers more than 16 hectares (40 acres) in the South of Montalcino.
The entire production of La Togata comes from vineyards located between Pieve di San Sigismondo, Montosoli, and Pietrafocaia. Reflecting the heritage of the region.
La Togata’s principal objective is to produce a limited edition of bottles of Brunello, demonstrating the wine’s characteristics, uniqueness, and elegance. The organoleptic characteristics of Brunello La Togata are the ruby color, fruity characteristics obtained by having the wine age for an extra year in the cellar before release. The Togata wines are fermented and are aged in a new Cantina at Sant’Angelo in Colle. The Cantina sits in the landscape with the appearance and grace of an old Venetian Villa.
The 5-story cellar, 3 underground levels, allows the wine-making to be done by gravity fall. As part of the aging process, the barrels are placed under the soil and surrounded by the natural paleolithic rock walls. There is a natural constant temperature which is never more than 18°C. Natural humidity is created by rainfall and water is retained and filtered penetrating slowly through the layers of this Galestro and Albarese rocks.

PRODUCTION
The vines are grown at an altitude of 300m and a trained using a bilateral and balanced cordon system. The harvest occurs at the end of September and is always concluded before mid-October. The wine is aged for six months in new Slavonian oak barrels of 40 hl/ 1056 gal before further bottle refinement for a minimum of six months.
DESCRIPTION
The name Barengo, acknowledges the words often spoken in the area from which the wine derives: “Che facciamo stasera? Barengo!” This translates to “What are we doing tonight? Let’s party!” This wine is an intense, limpid ruby red with violet reflexes. Barengo has a well-structured taste. It is soft with a persistence of fresh ripe fruits on the palate. As the name suggests, this is a wine to enjoy.

PRODUCTION
Grown at an altitude of 250m/ 820 ft., the vines are trained using a bilateral and balanced cordon. The grapes are harvested at the end of September. The wine is aged for 36 months in 17.5 hl/ 462 gal Slavonian oak barrels before refining over a minimum of 12 months in bottles.

PRODUCTION
The vineyards are in the hills of Montalcino, at different heights and with sun exposure until sunset. The age of the vineyards from which we select the grapes destined to produce Brunello is more than 20 years. The average altitude of the vineyards: 250m / 820 ft. The vineyards are subject to a double thinning of bunches and, during harvest (end of September), the average criterion of choice is, in good vintages, three bunches of five. The grapes thus obtained are further selected in the cellar, where they are processed according to the old tradition. Intense extraction in the early stages of fermentation, followed by long quiescent maceration on the marc. The ageing in wood lasts 48 months in oak barrels from Slavonia. It follows bottle ageing for 12 months far beyond the mandatory minimum of 6 months from production regulations.
DESCRIPTION
Rubine red with warm garnet red nuances. A mixture of dry macerated flowers and a light spice introduce you to a superb aromatic opening of woodsy notes, rose, and cherry. The wine has a powerful mineral entry, a mouth of a colossal magnitude, quite tannic with a nice freshness that continues.
